I love this recipe because it’s quite possibly the easiest thing in the world and it incorporates so many hormone healthy foods and fiber. This is definitely nutritionist approved, I eat this all the time!
Bonus, it’s also blood sugar friendly! I mostly just throw stuff together for this (and every recipe ha!) So here’s my attempt at telling you how much of what I used. But seriously, it’s so hard to mess this up!
Ingredients:
1 lb ground chicken or pork
½ onion sliced
2 cloves garlic
2 cups shredded carrot
4-8 cups coleslaw mix (just get a couple bags 💯)
2 green onions, chopped
2 T ginger
3 T tamari or coconut amino
1 T rice vinegar
1 tsp sesame oil
Add a little avocado or other oil to pan.. Cook your meat until almost done, add your onions and cook until soft. Add the rest of those veggies and cook until wilted. Add your sauces and mix, then serve with some green onions on top.
