Ingredients
  

  • 2 whole eggs
  • ½ cup egg whites
  • ¼ cup chopped red onion
  • ½ cup chopped spinach
  • ¼ cup crumbled feta cheese
  • 1 tsp olive oil extra virgin
  • Optional: pinch of oregano, salt, pepper

Method
 

  1. Heat olive oil in a nonstick pan over medium heat.
  2. Add onion and sauté 2 minutes, then stir in spinach until wilted.
  3. Whisk eggs and egg whites, pour over veggies.
  4. Scramble until cooked through. Top with feta and oregano.
  5. Serve with a side of fresh blueberries.
